
Over the Rainbow Cupcakes
Admittedly, I have not historically done much to celebrate St. Patrick’s Day with the kids. This year was different though. Once I realized that I could incorporate rainbows into decor, snacks, etc., I had a whole new outlook on the holiday. After all, who doesn’t love rainbows?! They are so colourful and cheery! Just check out these adorable “Over the Rainbow” cupcakes I made for the kids this year:

Aren’t they super cute?! They were also surprisingly easy to make! Using basic vanilla cupcakes as my base, I added some green coloured frosting on top, then decorated the cupcakes with pieces of multi-coloured candy ribbon for the rainbow, miniature white marshmallows for clouds, a miniature peanut butter cup as a pot and some small circular gold-coloured candies as gold coins!
The kids were definitely big fans:
